I am not sure who asked about butchering, but..
I do my own butchering, I know how my deer was cared for after the shot. I do not believe that you get
your deer back when you take it to a butcher shop. I do know the batch grind and you get the right number of pounds back but it is mixed with other peoples deer.
I will how ever take 1-2 hind quarters and have then cured and smoked just like ham. It is delicious. and I do get my deer back that way.
Another thing I like doing it myself is I do not add fat of any kind to my ground venison, it is a lean very healthy meat I want to keep it that way besides I can add bacon grease to the pan before frying it if i feel it needs it.
